Foto: Magnus Aronson<\/figcaption><\/figure>\n<p>Det g\u00e5r f\u00f6rst\u00e5s att laga allt m\u00f6jligt gott med alla f\u00e4rska svenska gr\u00f6nsaker just nu &#8230;<\/p>\n<p>&#8230; och varf\u00f6r inte en paj?<\/p>\n<p>Den h\u00e4r gjorde jag. Inget m\u00e4rkv\u00e4rdigt alls, bara fina r\u00e5varor som beh\u00f6vde g\u00e5 \u00e5t (blomk\u00e5lshuvudet h\u00f6ll p\u00e5 att bli lite mjukt) och milda smaker som blev extra goda tillsammans med fetaosten.<\/p>\n<p>M\u00f6jligen blev den lite blek att titta p\u00e5. Det hade man kunnat \u00e5tg\u00e4rda genom att l\u00e4gga blomk\u00e5len i botten och squashbitarna ovanp\u00e5 kanske.<\/p>\n<p>Och s\u00e5 hann vi \u00e4ta upp den innan jag hade lyckats f\u00e5 fram kameran.<\/p>\n<p>Men god blev den!<\/p>\n<p>en paj som r\u00e4cker som lunchhuvudr\u00e4tt till kanske fyra personer<br \/>\nUgn: 175 grader, 5&#8211;10 + ca 30 minuter<\/p>\n<p>pajdeg:<br \/>\n75 g sm\u00f6r<br \/>\n2 msk matolja<br \/>\n1\u00bd dl havregryn<br \/>\n2 dl vetemj\u00f6l<br \/>\n1 krm salt<br \/>\n1&#8211;2 msk vatten<\/p>\n<p>fyllning:<br \/>\n1 medelstor squash (kanske 30 cm l\u00e5ng) eller motsvarande m\u00e4ngd<br \/>\nlite sm\u00f6r eller olja att steka i<br \/>\nsalt, peppar och provencalsk kryddblandning<br \/>\n\u00bd medelstort blomk\u00e5lshuvud eller ca 400&#8211;500 g blomk\u00e5l<br \/>\nen gr\u00f6nsaksbuljongt\u00e4rning eller motsvarande m\u00e4ngd pulver + vatten att koka i<br \/>\n\u00bd&#8211;1 f\u00f6rpackning fetaost<br \/>\n4 \u00e4gg<br \/>\n4 dl mj\u00f6lk (eller en blandning av mj\u00f6lk och gr\u00e4dde)<br \/>\nca 1 msk vetemj\u00f6l<br \/>\nsalt och peppar<\/p>\n<p>L\u00e4gg sm\u00f6ret (som g\u00e4rna f\u00e5r ha legat framme i n\u00e5gra minuter &#8212; om det \u00e4r kylsk\u00e5pskallt, s\u00e5 sk\u00e4r det i sockerbitsstora bitar) i en matberedare tillsammans med pajdegens \u00f6vriga ingredienser och k\u00f6r till en deg &#8212; eller nyp ihop den f\u00f6r hand. Tryck ut den i en pajform och st\u00e4ll den i kylsk\u00e5pet.<\/p>\n<p>Sk\u00e4r squashen\u00a0i skivor och sk\u00e4r sedan varje skiva i fyra bitar. Stek dem i lite sm\u00f6r eller olja och krydda med salt, peppar och provencalsk kryddblandning.<\/p>\n<p>Dela blomk\u00e5lshuvudet i ganska sm\u00e5 buketter och sk\u00e4r stammen, stambitar och gr\u00f6na blad i sm\u00e5bitar. Koka en kort stund i gr\u00f6nsaksbuljong.<\/p>\n<p>F\u00f6rgr\u00e4dda pajskalet i 175 grader varm ugn i fem&#8211;tio minuter.<\/p>\n<p>Mosa fetaosten i en sk\u00e5l och vispa ihop den med \u00e4gg, mj\u00f6lk, vetemj\u00f6l, salt och peppar.<\/p>\n<p>H\u00e4ll bort eventuell v\u00e4tska fr\u00e5n squashbitarna och f\u00f6rdela dem i pajskalet. H\u00e4ll bort buljongen fr\u00e5n blomk\u00e5len (spara den g\u00e4rna och anv\u00e4nd den som degv\u00e4tska till matbr\u00f6d!) och l\u00e4gg blomk\u00e5lsbitarna ovanp\u00e5 squashbitarna.<\/p>\n<p>H\u00e4ll f\u00f6rsiktigt \u00e4ggstanningen \u00f6ver alltsammans och se till s\u00e5 att inte alla fetaostsmulor hamnar p\u00e5 samma st\u00e4lle.<\/p>\n<p>Gr\u00e4dda pajen tills \u00e4ggstanningen har stannat &#8212; jag \u00e4r lite os\u00e4ker p\u00e5 tiden, men det kan kanske ha tagit en halvtimme eller lite mer.<\/p>\n<p>Servera den tillsammans med ett fat f\u00e4rska gr\u00f6nsaker av andra sorter.
