Tv\u00e5 av deras gemensamma v\u00e4nner kan inte \u00e4ta gluten. Vad bjuder man p\u00e5 d\u00e5?<\/p>\n<p>Jag bakade <a href=\"https:\/\/bloggar.hemmetsjournal.se\/?p=22\" target=\"_blank\">den glutenfria varianten av kladdkaka med havregryn<\/a> &#8212; Finax grova glutenfria mj\u00f6lmix och s\u00e5 havregryn av rent havre &#8212; och s\u00e5 det h\u00e4r br\u00f6det, som kanske b\u00e4st kan beskrivas som en ganska tung och kompakt foccacia. Receptet provade jag f\u00f6rsta g\u00e5ngen n\u00e4r vi arbetade med Hembakat f\u00f6r alla. Det bygger p\u00e5 Sofia Eklunds glutenfria l\u00e5ngpannebr\u00f6d, och jag t\u00e4nkte att kokt quinoa kunde vara ett bra alternativ till sk\u00e5llning f\u00f6r den som inte t\u00e5l vete eller r\u00e5g. Det \u00e4r det.<\/p>\n<p>Och det underbara med det h\u00e4r br\u00f6det \u00e4r att de g\u00e4ster som inte har n\u00e5gra problem med gluten ocks\u00e5 tycker om det! De som inte \u00e4r glutenintoleranta brukar inte m\u00e4rka att det inte \u00e4r vanligt br\u00f6d!\u201d<\/p>\n<p>En del av hemligheten \u00e4r Fiberhusk, som g\u00f6r br\u00f6det saftigt och lite segt. Att platta ut en glutenfri deg i en l\u00e5ngpanna \u00e4r ocks\u00e5 smart eftersom det g\u00f6r att j\u00e4skraften inte utmanas s\u00e5 mycket. Och s\u00e5 minskas smuligheten!<\/p>\n<p>Eftersom sk\u00e5llning \u00e4r en bra metod f\u00f6r att f\u00e5 saftiga glutenbr\u00f6d f\u00f6rs\u00f6kte jag komma p\u00e5 n\u00e5got att sk\u00e5lla till ett glutenfritt br\u00f6d. Det blev quinoafr\u00f6n.<\/p>\n<p>Br\u00f6det \u00e4r f\u00f6rst\u00e5s godast nygr\u00e4ddat, men det h\u00e5ller sig saftigt lite l\u00e4ngre \u00e4n annat glutenfritt br\u00f6d. Perfekt till soppa, till exempel.<\/p>\n<p>Till min kusins fest ersatte jag solrosfr\u00f6na med timjan. Rosmarin eller n\u00e5got annat skulle nog ocks\u00e5 ha blivit gott.<\/p>\n<p>en l\u00e5ngpanna full<br \/>\nSv\u00e4llning och j\u00e4sning: 10 + 60 minuter<br \/>\nUgn: 225\u00ba, ca 15 minuter<\/p>\n<p>2 dl quinoafr\u00f6n + vatten och salt till kokning<br \/>\n50 g j\u00e4st<br \/>\n6 dl vatten<br \/>\n4 msk olivolja<br \/>\n2 msk Fiberhusk<br \/>\n2 tsk salt<br \/>\nca 650 g grov glutenfri mj\u00f6lblandning (ca 11 dl)<\/p>\n<p>ovanp\u00e5:<br \/>\nolivolja, solrosfr\u00f6n och flingsalt<\/p>\n<p>Koka quinoafr\u00f6na i saltat vatten tills de \u00e4r genomskinliga. L\u00e5t dem svalna.<\/p>\n<p>Smula ner j\u00e4sten i degbunken och l\u00f6s upp den i det kalla vattnet. Tills\u00e4tt olja, Fiberhusk och salt. R\u00f6r om och l\u00e5t sv\u00e4lla i tio minuter.<\/p>\n<p>Blanda ner quinoafr\u00f6na och mj\u00f6let. Arbeta degen kraftigt, till exempel med elvispens degkrokar. Degen blir ganska l\u00f6s och kladdig och g\u00e5r inte att kn\u00e5da.<\/p>\n<p>V\u00e4lt upp den p\u00e5 en pl\u00e5t eller i en l\u00e5ngpanna kl\u00e4dd med bakpl\u00e5tspapper.<\/p>\n<p>Platta ut till en j\u00e4mn br\u00f6dkaka med hj\u00e4lp av en oljad degskrapa och l\u00e5t den j\u00e4sa under bakduk i minst en timme.<\/p>\n<p>Picka det j\u00e4sta br\u00f6det. Pensla det med olivolja och str\u00f6 \u00f6ver solrosfr\u00f6n och flingsalt.<\/p>\n<p>Gr\u00e4dda br\u00f6det mitt i ugnen i 225 grader i ungef\u00e4r en kvart eller tills det \u00e4r genomgr\u00e4ddat och har f\u00e5tt lite f\u00e4rg.<\/p>\n<p>Sk\u00e4r det i rutor och sk\u00e4r dem eventuellt itu som frallor, eller st\u00e4ll fram det som det \u00e4r p\u00e5 en stor sk\u00e4rbr\u00e4da med en br\u00f6dkniv.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>F\u00f6r ett par veckor sedan fyllde en av mina kusiner 22 \u00e5r och skulle ha fest tillsammans med en j\u00e4mn\u00e5rig v\u00e4ninna.
