Tidigare \u00e5r har jag faktiskt k\u00f6pt pajer ett par g\u00e5nger eftersom k\u00f6ket \u00e4r s\u00e5 upptaget inf\u00f6r festen, men nu kunde jag \u00e5ka lite tidigare och g\u00f6ra pajer p\u00e5 plats i god tid. F\u00f6ljden blev att vi \u00e5t upp den h\u00e4r pajen i omg\u00e5ngar p\u00e5 onsdagen och torsdagen och att det var broccoli-och-\u00e4delost-pajen som blev en del av midsommarbuff\u00e9n. Men det gick ju bra p\u00e5 det viset ocks\u00e5!<\/p>\n\n\n\n<p>Det som \u00e4r extra med den h\u00e4r pajen \u00e4r att det som vanligt \u00e4r V\u00e4sterbottensost som ger det mesta av smaken men att tv\u00e5 mer eller mindre vita gr\u00f6nsaker finns i fyllningen och ger den lite mer substans \u00e4n n\u00e4r det \u00e4r bara \u00e4ggstanning med ost. Det blev bra!<\/p>\n\n\n\n<p>Det h\u00e4r \u00e4r en sats f\u00f6r en st\u00f6rre pajform. Till en springform kan man g\u00f6ra degen p\u00e5 100 g sm\u00f6r + 2 dl vetemj\u00f6l + 1 dl havregryn och minska \u00e4ggstanningen till tre \u00e4gg och tre deciliter mj\u00f6lk.<\/p>\n\n\n\n<p>Kylsk\u00e5p: ca 30 minuter<br>Ugn: 175 grader i ca 15 + ca 45 minuter<\/p>\n\n\n\n<p>pajdeg:<br>150 g sm\u00f6r<br>1 dl havrekli<br>2 dl havregryn<br>3 dl vetemj\u00f6l<br>lite salt<br>\u00bd dl vatten<\/p>\n\n\n\n<p>fyllning:<br>ca 400 g fryst blomk\u00e5l i buketter eller ungef\u00e4r lika mycket f\u00e4rsk, kokt (jag anv\u00e4nde en p\u00e5se)<br>det vita fr\u00e5n en stor purjol\u00f6k<br>ca 100 g V\u00e4sterbottensost<br>ca 200 g riven ost<br>5 \u00e4gg<br>5 dl mj\u00f6lk<br>ca 1 msk vetemj\u00f6l<br>salt och peppar<\/p>\n\n\n\n<p>Sk\u00e4r sm\u00f6ret i kuber och l\u00e4gg dem i en bunke eller i en matberedarsk\u00e5l. Tills\u00e4tt havrekli, havregryn, vetemj\u00f6l, salt och vatten och arbeta ihop till en deg.<\/p>\n\n\n\n<p>Tryck ut degen i en pajform och st\u00e4ll den att vila i kylsk\u00e5p i ungef\u00e4r en halvtimme.<\/p>\n\n\n\n<p>F\u00f6rgr\u00e4dda pajskalet i 175 graders ugnsv\u00e4rme i ungef\u00e4r en kvart.<\/p>\n\n\n\n<p>Ta under tiden fram blomk\u00e5lsbuketterna ur frysen (eller f\u00f6rv\u00e4ll f\u00e4rsk blomk\u00e5l). Riv V\u00e4sterbottensosten om den inte redan \u00e4r riven. Sk\u00e4r djupa snitt l\u00e4ngs med fibrerna i den vita delen av purjol\u00f6ken p\u00e5 ett par st\u00e4llen (f\u00f6r att undvika l\u00e5nga strimlor) och strimla den.<\/p>\n\n\n\n<p>Vispa ihop \u00e4gg, mj\u00f6lk, mj\u00f6l, peppar och salt till \u00e4ggstanningen.<\/p>\n\n\n\n<p>Ta ut pajskalet ur ugnen men l\u00e5t ugnen vara p\u00e5slagen.<\/p>\n\n\n\n<p>L\u00e4gg blomk\u00e5lsbuketterna i pajskalet, f\u00f6rdela purjol\u00f6ksstrimlor och V\u00e4sterbottensost bland dem, h\u00e4ll \u00e4ggstanningen \u00f6ver och str\u00f6 den &#8221;vanliga&#8221; rivna osten ovanp\u00e5.<\/p>\n\n\n\n<p>Gr\u00e4dda pajen i 175 graders ugnsv\u00e4rme.
