Bild: Debra Hughes-Leitch<\/figcaption><\/figure>\n\n\n\n<p>I en engelskspr\u00e5kig receptgrupp f\u00f6r \u00f6vers\u00e4ttare var det i h\u00f6stas en som bad om tips p\u00e5 hembakat att ta med till en v\u00e4ninna som nyligen hade blivit diagnosticerad med diabetes.<\/p>\n\n\n\n<p>Jag fr\u00e5gade min v\u00e4ninna Debra om hon ville skicka sin b\u00e4sta version av de fr\u00f6kn\u00e4ckebr\u00f6d som jag l\u00e4rde henne att baka v\u00e5ren 2022 och som hon har experimenterat med sedan dess &#8212; men nu kom hennes recept p\u00e5 coconut shortbread, allts\u00e5 ett slags kokoskex, ist\u00e4llet! Shortbread \u00e4r &#8221;sm\u00e5 spr\u00f6da, brittiska m\u00f6rdegskakor som riktigt sm\u00e4lter i munnen&#8221;, enligt en av de stora receptsidorna. Bakpulver kallas ibland shortening, och min gissning \u00e4r att det har n\u00e5got med saken att g\u00f6ra &#8212; i alla fall har vetemj\u00f6lets gluten ingen chans att breda ut sig och bilda l\u00e5nga tr\u00e5dar i shortbread. Fast de h\u00e4r kakorna inneh\u00e5ller inget vetemj\u00f6l &#8212; det har Debra ersatt med mandelmj\u00f6l och kokos f\u00f6r blodsockrets skull.<\/p>\n\n\n\n<p>24 kakor (ca 1\u00bd g kolhydrater per kaka enligt Debras utr\u00e4kning)<br>Ugn: 125 grader i varmluftsugn i ungef\u00e4r 10 minuter<\/p>\n\n\n\n<p>180 g mandelmj\u00f6l (eller malda mandlar)<br>150 g Creamed Coconut (kan ocks\u00e5 s\u00e4ljas som Coconut Concentrate)<br>1 stk vaniljextrakt<br>1 tsk \u00e4ppelcidervin\u00e4ger<br>\u00bd tsk bikarbonat<br>en nypa salt<br>1 tsk inulin (ska man kunna hitta i h\u00e4lsokostaff\u00e4rer &#8212; allts\u00e5 inte en felskrivning av insulin! \ud83d\ude42 )<br>60 ml kokosn\u00f6tsolja (anv\u00e4nd den som har skiktat sig i Creamed Coconut-f\u00f6rpackningen och l\u00e4gg till mer om det beh\u00f6vs)<br>60 ml flytande s\u00f6tningsmedel, sockerfritt (Debra anv\u00e4nder Skinny Food Company Chocoholic Coconut Syrup)<br><br>Blanda alla ingredienser till en deg.
