Mina f\u00f6r\u00e4ldrar har bara en liten ugn (allts\u00e5 inte <em>en <\/em>liten ugn utan en <em>liten <\/em>ugn) i sitt k\u00f6k, och man kan inte anv\u00e4nda spisplattor och ugn samtidigt, s\u00e5 allt som skulle bakas tog sin tid. Men vi hade best\u00e4mt oss f\u00f6r att det skulle finnas glutenfria sm\u00e5kakor, och vi bakade massor av den h\u00e4r sorten!<\/p>\n\n\n\n<p>Det \u00e4r en gammaldags sm\u00e5kaka som har f\u00e5tt en liten ren\u00e4ssans nu eftersom den bakas helt och h\u00e5llet p\u00e5 potatismj\u00f6l &#8212; antagligen det billigaste glutenfria mj\u00f6l som finns i Sverige. Vill man kan man l\u00e4gga en bit bakpl\u00e5tspapper p\u00e5 hush\u00e5llsv\u00e5gen och dela upp degen i fyra eller \u00e5tta lika stora delar f\u00f6r att ha lite b\u00e4ttre \u00f6verblick n\u00e4r man rullar och r\u00e4knar.<\/p>\n\n\n\n<p>Det \u00e4r bara citronskalet som beh\u00f6vs i kakorna, s\u00e5 skiva sj\u00e4lva citronerna och l\u00e4gg dem i bordsvattnet, eller pressa dem och frys in som iskuber till senare.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Glutenfria citronkakor med potatismj\u00f6l<\/h4>\n\n\n\n<p><em>80&#8211;120 kakor<\/em><\/p>\n\n\n\n<p><em>Ugn: 175 grader, 10-15 minuter<\/em><\/p>\n\n\n\n<p>250 g sm\u00f6r (vi anv\u00e4nde KRAV-m\u00e4rkt sm\u00f6r, men anv\u00e4nd mj\u00f6lkfritt margarin om n\u00e5gon inte t\u00e5l mj\u00f6lk)<\/p>\n\n\n\n<p>3 dl str\u00f6socker (vi anv\u00e4nde Fairtrade-m\u00e4rkt r\u00f6rsocker den h\u00e4r g\u00e5ngen)<\/p>\n\n\n\n<p>drygt 1 msk vaniljsocker (vi anv\u00e4nde det KRAV-m\u00e4rkta)<\/p>\n\n\n\n<p>2 \u00e4gg (vi anv\u00e4nde KRAV-\u00e4gg)<\/p>\n\n\n\n<p>3 citroner (KRAV-m\u00e4rkta om det finns)<\/p>\n\n\n\n<p>ca 9 dl potatismj\u00f6l<\/p>\n\n\n\n<p>R\u00f6r ihop sm\u00f6r, str\u00f6socker och vaniljsocker. R\u00f6r sedan ner \u00e4ggen ett i taget. Riv skalet p\u00e5 citronerna och tills\u00e4tta det. R\u00f6r sedan ner potatismj\u00f6let och r\u00f6r noga tills degen \u00e4r smidig.<\/p>\n\n\n\n<p>Dela degen i fyra eller \u00e5tta delar och forma sm\u00e5 bollar. L\u00e4gg dem p\u00e5 pl\u00e5tar kl\u00e4dda med bakpl\u00e5tspapper. Doppa en gaffel i potatismj\u00f6l och tryck till varje kaka lite grann. Gr\u00e4dda kakorna mitt i ugnen, 175 grader varm, i tio&#8211;femton minuter. Lossa dem f\u00f6rsiktigt med osthyvel och l\u00e5t dem svalna.
